Course Description
The Professional Chef course is an essential three-day entry-level training course designed to introduce learners to the standards, behaviours, and foundational knowledge required in a professional kitchen environment. It is ideal for those beginning their careers in hospitality kitchens, safari lodges, or food service operations.
Through a blend of theory, demonstrations, and scenario-based training, learners explore a wide range of critical culinary topics such as personal hygiene, guest interaction, food safety, kitchen communication, cooking methods, ingredient handling, tools and equipment, and cost awareness. The course also includes a self-development plan to support long-term culinary growth.
Course Outcome
By the end of this course, participants will be able to:
- Understand the role and responsibilities of a professional chef, including conduct, personal hygiene, and uniform standards.
- Communicate effectively with guests and colleagues, handling guest interactions and dietary needs with professionalism.
- Apply workplace skills such as time management, team collaboration, and respectful communication.
- Demonstrate basic food safety and hygiene practices, including handwashing, cross-contamination prevention, and temperature control Identify and safely use basic kitchen tools and equipment, from knives to large-scale cooking devices.

- Assist in food preparation using standard units of measure, understanding imperial and metric conversions.
- Recognize menu types and how to control food costs, including the importance of portioning and inventory management.
